Ingredients

  • 2 x 250g Uncle Ben's Tex-Mex Style or Smoky Flavour Rice & Beans Pouches
  • 12 large cos lettuce leaves
  • 1/3 cup sour cream
  • 1 cup grated cheddar
  • 300g can corn kernels, drained
  • 1 avocado, thinly sliced
  • 1/3 cup fresh coriander leaves
  • Lime wedges, to serve

Method

  1. Heat rice following packet directions. Fluff with fork.
  2. Meanwhile, trim 6cm off base of each lettuce leaf. Spread leaves with sour cream. Top with rice, cheese, corn, avocado and coriander.
  3. Fold over base first, then fold in sides, leaving tops exposed. Secure with toothpicks. Serve with lime wedges.
