Air-Fryer Potato Salad With Bacon & Kaleslaw
Use your microwave and air fryer to whip up speedy twice-cooked potatoes that are then tossed with bacon and kaleslaw. It's the ideal no-fuss potato salad.
Ingredients
- 800g WW Cook potato baby herb & butter
- 175g shortcut bacon, roughly chopped
- 350g kaleslaw kit
Method
- Preheat air fryer to 200°C. Pierce potato packets several times with a small, sharp knife. Microwave on high for 6 minutes or until potatoes are just tender.
- Place potatoes and bacon in air-fryer basket and slide basket into air fryer. Cook for 12 minutes or until bacon is crisp and potato is light golden. Halve potatoes.
- Prepare kaleslaw according to packet instructions. Add bacon and potato, then toss to combine. Serve.
