Air-fryer Thai-style Beef Rolls
Cooked to perfection in the air fryer, these easy beef spring rolls deliver punchy Thai flavours and delightful crunch in every bite.
Ingredients
- 1/2 bunch basil
- 500g beef mince
- 2 cloves garlic, crushed
- 1/2 cup sweet chilli sauce
- 2 spring onions, finely chopped
- 8 frozen spring roll wrappers, thawed
- 400g green beans
- 150g thick dried rice noodles
- 315g Thai salad kit
- 1 long red chilli
- 5mL extra virgin olive oil cooking spray
Method
- Pick leaves from basil. Chop half of the basil leaves. Combine beef, garlic, 2 tbs sweet chilli, half of the onion and chopped basil in a large bowl.
- To make a roll, place 1 wrapper on a clean work surface diagonally with point at top. Place 3-4 beans across the middle of wrapper, then top with cup beef mixture. Roll up wrapper, folding in edges to enclose filling, to form a log. Repeat with remaining wrappers, beans and beef mixture to make 8 rolls in total.
- Spray rolls with oil. Cook rolls, in batches, in a 5L air fryer at 200°C for 10 minutes or until cooked through and golden-brown.
- Place noodles in a heatproof bowl. Cover with boiling water. Stand for 3-5 minutes or until softened. Drain, then refresh under cold water. Place in a bowl with salad kit, sliced chilli and three-quarters of the basil leaves. Toss to combine. Serve rolls with salad mixture, remaining basil leaves and remaining sweet chilli.
Prepping tip:
No air-fryer? Place rolls on a baking tray lined with baking paper. Bake in a preheated 200°C/180°C oven for 20 minutes, turning halfway or until golden and cooked through.
