Bagel Pizzas v2

A fun snack for the kids, these mini pizzas are made using halved bagels as the base. Whip these up in 20 minutes for a tasty after-school snack.

Ingredients

  • 4 plain bagels, split
  • 1/3 cup no-added salt tomato paste
  • 1 cup shredded mozzarella
  • 1 small red capsicum, halved, deseeded, thinly sliced
  • 227g canned pineapple pieces in juice, drained
  • 200g tomatoes, halved
  • 1/4 bunch basil, leaves picked

Method

  1. Preheat oven to 240°C/220°C fan-forced. Line 2 baking trays with baking paper.
  2. Spread cut sides of bagels with paste. Place on trays and top with mozzarella, capsicum, pineapple and tomato.
  3. Bake for 10 minutes or until mozzarella is golden and has melted. Serve scattered with basil.
