Baked Feta Pasta
After an easy pasta recipe? Try this super speedy baked feta pasta. Simply bake tomatoes, garlic and feta together for a quick, no-fuss homemade pasta sauce.
Ingredients
- 3 x 200g punnets Solanato tomatoes
- 200g block smooth feta
- 1 tbs extra virgin olive oil
- 1 tsp dried oregano
- 1/2 x 500g rigatoni
Method
- Preheat oven to 200°c/180°c fan-forced.
- Place tomatoes on a large, shallow baking tray. Place feta in centre of tray. Drizzle with oil, then sprinkle with oregano and season. Bake for 30 minutes or until feta starts to brown.
- Meanwhile, cook pasta according to packet instructions.
- Remove tray from oven. Using a fork, crush feta and tomatoes. Add drained pasta to tray and toss to combine. Scatter over basil leaves and serve.
