Healthier Frozen Fruity Yoghurt Bark with Muesli
Frozen yoghurt pieces topped with mashed raspberries, muesli and coconut flakes makes a perfect after-school sweet treat. Plus, they're a nutritionally approved treat that the kids will love.
Ingredients
- 125g raspberries
- 1 1/2 cups reduced fat natural yoghurt
- 1/2 tsp vanilla extract
- 2 tsp pure maple syrup
- 1/4 cup summer fruits muesli
- 1/4 cup toasted coconut flakes
Method
- Line a 30 x 20cm baking tray with baking paper, allowing paper to overhang for handles. Using a fork, mash raspberries in a bowl until almost pureed.
- Whisk yoghurt, vanilla and maple syrup in a large bowl until combined.
- Spread yoghurt mixture over prepared tray. Smooth surface.
- Drizzle with puree. Top with muesli and coconut flakes. Freeze for 3-4 hours or until firm. Cut into pieces and serve.
