Frozen Fruity Yoghurt Bark With Muesli

Frozen yoghurt pieces topped with mashed raspberries, muesli and coconut flakes makes a perfect after-school sweet treat. Plus, they're a nutritionally approved treat that the kids will love.

Ingredients

  • 125g raspberries
  • 1 1/2 cups reduced fat natural yoghurt
  • 1/2 tsp vanilla extract
  • 2 tsp pure maple syrup
  • 1/4 cup summer fruits muesli
  • 1/4 cup toasted coconut flakes

Method

  1. Line a 30 x 20cm baking tray with baking paper, allowing paper to overhang for handles. Using a fork, mash raspberries in a bowl until almost pureed.
  2. Whisk yoghurt, vanilla and maple syrup in a large bowl until combined.
  3. Spread yoghurt mixture over prepared tray. Smooth surface.
  4. Drizzle with puree. Top with muesli and coconut flakes. Freeze for 3-4 hours or until firm. Cut into pieces and serve.
