Barbecued Fruit
Finish you barbecue banquet in style and grill a selection of the seasons best. Serve with fresh cream or vanilla ice-cream.
Ingredients
- 4 white peaches, quartered, stone removed
- 4 yellow nectarines, quartered, stone removed
- 200g cherries, pitted, stems intact
- 60ml Malibu
- 2 Tbsp Essentials brown sugar
- 6 white chocolate
- Macadamia biscuits
- Cream or vanilla ice-cream, to serve
Method
- Preheat barbecue on medium. Place fruit in a disposable foil tray. Add liqueur and sugar. Toss to combine.
- Crumble biscuits over fruit. Cover with foil. Place on barbecue. Roast for 15 minutes. Remove foil and cook for 10 minutes or until fruit has softened. Serve with cream or ice-cream, drizzled with juice from cooked fruit.
