How to Brine a Turkey
To brine or not to brine?
Turkey is often regarded as dry and unappealing. There is a simple way around this. Brine. A solution of water, salt, bay leaves and peppercorns is the perfect way to transform either a whole turkey or as in this case just the Turkey fillet. It adds flavor and moisture and the results are worth the minimal effort needed. It’s also amazing with all cuts of chicken.
Brine Ingredients
1L water
70g salt
2 Bay leaves
1 tsp peppercorns
Method
Soak the Turkey in the solution in the fridge for 12-16 hours.
Remove and pat dry.
Cook the turkey for 2 mins each side in a pan and finish in the oven for 10 – 15 mins at 150 degrees. Remove and rest.
