Biscoff Pods
Ingredients
- 1/2 cup Nestle Highlander Caramel Filling
- 250g Lotus biscoff biscuit
- 100g butter melted
- 1 cup Lotus biscoff spread
- 1/2 cup milk chocolate
- 1 tbsp coconut oil
Method
- Lightly grease a 12 cup muffin tray with cooking oil.
- Blend biscuits in a food processor or blender until fine.
- Mix blended biscuits with melted butter.
- Spoon batter into muffin tray and press lightly with fingers to form a cup and put in freezer to set for 1 hour.
- Once set, spoon biscoff spread into each cup then cut a small hole in the middle of the biscoff layer using the end of a knife.
- Using a piping bag (or sandwich bag with a small hole cut), pipe the caramel filling into the holes in the biscoff layer.
- Melt the chocolate and coconut oil in the microwave.
- Using a second piping bag, pipe the chocolate on each pod to cover all of the top.
- Place in freezer for another hour to set and enjoy!
