Biscoff Pods

Ingredients

  • 1/2 cup Nestle Highlander Caramel Filling
  • 250g Lotus biscoff biscuit
  • 100g butter melted
  • 1 cup Lotus biscoff spread
  • 1/2 cup milk chocolate
  • 1 tbsp coconut oil

Method

  1. Lightly grease a 12 cup muffin tray with cooking oil.
  2. Blend biscuits in a food processor or blender until fine.
  3. Mix blended biscuits with melted butter.
  4. Spoon batter into muffin tray and press lightly with fingers to form a cup and put in freezer to set for 1 hour.
  5. Once set, spoon biscoff spread into each cup then cut a small hole in the middle of the biscoff layer using the end of a knife.
  6. Using a piping bag (or sandwich bag with a small hole cut), pipe the caramel filling into the holes in the biscoff layer.
  7. Melt the chocolate and coconut oil in the microwave.
  8. Using a second piping bag, pipe the chocolate on each pod to cover all of the top.
  9. Place in freezer for another hour to set and enjoy!
