Breakfast Pizza
Ingredients
- 1 tsp olive oil
- 1/4 cup pizza sauce
- 4 piece shortcut bacon (diced)
- 1 cup pizza cheese
- 2 cup potato minis
- 1 free range egg
- 1/2 bunch chives, chopped
- 1 pizza base
Method
- Heat oil in a medium frying pan over medium-high heat. Cook bacon for 3-4 minutes or until crispy. Add potato minis and cook for a further 2 minutes or until potato minis are slightly thawed.
- Meanwhile, preheat oven to 180°C. Line a baking tray with baking paper. Spread sauce on pizza base and place on tray. Top with bacon and potato minis, leaving a well in the centre for the egg. Top with cheese, then crack the egg in the centre.
- Bake pizza for 20 minutes, or until potato minis are golden and egg is cooked. Sprinkle with chives, slice and serve immediately.
