Butter Chicken

Ingredients
- 150g butter
- 1 large brown onion, finely chopped
- 2 cloves garlic, crushed
- 400g tomato puree
- 600ml cream
- 2 tsp salt
- 1 tsp cayenne pepper
- 1 tsp garam masala
- 800g chicken breast, cubed
- 2 tbsp vegetable oil
- 2 tbsp tandoori masala
- Rice to serve
- Fresh parsley to garnish
Method
- Melt 50g of the butter in a large fry pan over medium heat. Cook onion and garlic until the onions are caramelised.
- While the onions are cooking, melt 100g butter in a large saucepan. Add the tomato puree, cream, salt, cayenne pepper, and garam masala. Bring to the boil then reduce heat. Cover and simmer for 30 minutes, stirring occasionally.
- While the sauce is cooking pan fry the chicken until cooked through. Add the caramelised onions to the sauce and simmer for another 15 minutes.
- Serve over rice and garnish with parsley.
