A tasty Mexican meal for two
350g skinned & boned chicken breasts
1-2 tablespoons olive oil
1-2 teaspoons Mexican seasoning mix
2 x 20cm soft flour tortillas
1 cup each: shredded lettuce, light sour cream
1 avocado, mashed
Salsa: 1 large chopped tomato, dash chilli sauce, 1 diced shallot, chopped coriander & lemon juice to taste
Brush the chicken with the oil. Sprinkle with the Mexican mix. Grill for about 5 minutes each side or until cooked. Cool slightly then chop.
Warm the tortillas through in the microwave for about 20 seconds. Fill the tortillas with chicken and the remaining ingredients including the combined salsa mixture. Roll up and enjoy.
