An easy to prepare everyday gourmet meal.
2 large skinned and boned chicken breasts
4 large rashers SR Streaky Bacon
1 tablespoon Homebrand Sunflower Oil
1 small onion, diced
2 cloves garlic, crushed
400g can Homebrand Diced Tomatoes
2 teaspoons dried mixed herbs
Halve the chicken breasts lengthwise. Wrap each in a bacon rasher. Pan-fry in the oil in a non-stick frying pan, until golden. Add the onion and garlic and cook for 1 minute. Add the tomatoes and herbs. Cover and simmer for about 10 minutes, until cooked. Great served with rice or mash.
