Chicken Zoodle Salad
Ingredients
Salad
- 1/2 avocado (sliced)
- 2 zucchini (spiralised)
- 120g baby rocket
- 40g pitted green olives (sliced)
- 6 slices prosciutto (grilled)
Green Goddess Dressing
- 1/2 avocado
- 1 spring onion (chopped)
- 1 tbs white wine vinegar
- 1 tbs olive oil
- 2 tbs mayonnaise
Chicken
- 1 tbs olive oil
- 2 tbs lemon juice
- 2 tbs all-purpose seasoning
- 4 chicken thigh fillets
Method
- To make the chicken, combine pepper seasoning, lemon juice and oil in a bowl. Add chicken and turn to coat.
- Cook chicken in a preheated chargrill pan or barbecue over medium-high heat for 4 minutes on each side or until cooked through. Slice.
- To make the green goddess dressing, process all the ingredients in a small food processor until smooth.
- Spread a little dressing onto plates. Top with rocket, zucchini, avocado, prosciutto, olives and chicken. Season with pepper. Serve.
