Chinese-style Cucumber Salad
Give an old favourite a different spin as spiral-cut cucumber comes to life courtesy of almonds, coriander and a twin chilli assault.
Ingredients
- 2 continental cucumbers, halved crossways
- 1/4 bunch coriander, leaves picked
- 2 tbs slivered almonds, toasted
- 1 tbs sesame seeds, toasted
- 2 tsp dried chilli flakes
- 1 tbs chilli oil
- 1 tbs sesame oil
Method
- Using a spiraliser, cut cucumber into long spirals.
- Arrange cucumber and coriander on a serving plate. Sprinkle with almonds, sesame seeds and chilli flakes. Drizzle with chilli oil and sesame oil. Serve.
