Chocolate-Coated Banana Bites

Ingredients
- 6 small bananas, peeled, halved
- ¼ cup chopped macadamia nuts, toasted
- ¼ cup chopped pistachio kernels, toasted
- 200g dark or milk chocolate, chopped
Method
- Line a baking tray with baking paper. Insert sticks into banana pieces. Place on baking tray, cover with plastic and freeze for 30-60 minutes.
- Place macadamia and pistachio in separate shallow bowls. Place chocolate in a small heatproof bowl over a saucepan of simmering water. Stir with a metal spoon for 5 minutes or until melted and smooth.
- Partially dip banana pieces into the chocolate to coat, allowing excess to drip off. Gently roll 6 of the bananas pieces in macadamia and 6 in pistachio. Return to tray. Freeze for 10 minutes.

For an extra-sweet treat, roll chocolate-coated bananas in sprinkles or drizzle with melted white chocolate.
Use it up: peel and freeze over-ripe bananas then blend them with a dash of milk to a smooth consistency – it tastes just like soft serve!
