Cranky Goats Cheese Bruschetta
It's easy to make and the perfect dish to serve when you're craving something classic and refreshing.
Ingredients
- 200g Goats cheese
- 100ml cream
- Salt and pepper
- Small sourdough or baguette
- 2 courgettes
- 6 leaves mint thinly sliced
- ⅓ cup pine nuts
- 2 tbs Balsamic glaze
- 4 tbs Olive oil
Method
- Place the goats cheese, cream and season in a blender
- Blend till smooth careful not to over process and split the mix
- Slice the bread in to desired serving size
- Toast with some oil and seasoning
- Cut the courgette in to 3 lengthways and season
- Place in pan until coloured on both sides
- Toast pine nuts till golden brown
- Pipe the goats cheese mix in a decorative squiggle or wiggle on to toasts
- Sprinkle over the toasted pine nuts and mint strips
- Cut each slice of courgette into 3 and place 1 piece of courgette onto the cheese mix
- Drizzle with remaining oil and balsamic glaze
