Cranky Goats Cheese Bruschetta

It's easy to make and the perfect dish to serve when you're craving something classic and refreshing.

Ingredients

  • 200g Goats cheese
  • 100ml cream
  • Salt and pepper
  • Small sourdough or baguette
  • 2 courgettes
  • 6 leaves mint thinly sliced
  • ⅓ cup pine nuts
  • 2 tbs Balsamic glaze
  • 4 tbs Olive oil

Method

  1. Place the goats cheese, cream and season in a blender
  2. Blend till smooth careful not to over process and split the mix
  3. Slice the bread in to desired serving size
  4. Toast with some oil and seasoning
  5. Cut the courgette in to 3 lengthways and season
  6. Place in pan until coloured on both sides
  7. Toast pine nuts till golden brown
  8. Pipe the goats cheese mix in a decorative squiggle or wiggle on to toasts
  9. Sprinkle over the toasted pine nuts and mint strips
  10. Cut each slice of courgette into 3 and place 1 piece of courgette onto the cheese mix
  11. Drizzle with remaining oil and balsamic glaze
