Cucumber Dill Yoghurt Salad

This creamy cucumber salad with fresh dill and Greek yoghurt is a light and healthy side dish.

Ingredients

  • 2 cloves garlic, crushed
  • 5 Lebanese cucumbers
  • 1 1/2 tbs fresh mint
  • 2 tbs small fresh mint leaves, to serve
  • 1 tbs pomegranate seeds
  • 1 tsp dried mint
  • 1 1/2 tbs lemon juice
  • 1 cup Greek-style natural yoghurt
  • 1 1/2 tbs olive oil
  • 1 1/2 tbs fresh dill
  • 2 tbs dill sprigs, to serve
  • 1/4 cup pistachios

Method

  1. Combine garlic, yoghurt, juice, dill and fresh and dried mint in a large bowl. Add cucumber and season with salt and pepper. Toss to coat. Serve drizzled with oil and scattered with pistachios, pomegranate seeds and herbs.
