Cucumber, Dill & Yoghurt Salad
This creamy cucumber salad with fresh dill and Greek yoghurt is a light and healthy side dish.
Ingredients
- 2 cloves garlic, crushed
- 5 Lebanese cucumbers
- 1 1/2 tbs fresh mint
- 2 tbs small fresh mint leaves, to serve
- 1 tbs pomegranate seeds
- 1 tsp dried mint
- 1 1/2 tbs lemon juice
- 1 cup Greek-style natural yoghurt
- 1 1/2 tbs olive oil
- 1 1/2 tbs fresh dill
- 2 tbs dill sprigs, to serve
- 1/4 cup pistachios
Method
- Combine garlic, yoghurt, juice, dill and fresh and dried mint in a large bowl. Add cucumber and season with salt and pepper. Toss to coat. Serve drizzled with oil and scattered with pistachios, pomegranate seeds and herbs.
