Easy Beef & Mexican-Style Salad Tortilla Pockets
Whip up a delicious spiced beef tortilla wrap with creamy avocado and crunchy Mexican-style salad. Try this easy recipe for a tasty dinner in a hurry.
Ingredients
- 375g tortilla pockets kit
- 440g Mexican-style salad kit
- 1 tbs extra virgin olive oil
- 500g beef stir-fry strips
- 1 avocado, destoned, cut into thin wedges
Method
- Heat tortilla pockets according to packet instructions.
- Meanwhile, prepare salad kit according to packet directions. Heat oil in a large frying pan over high heat.
- Cook beef, in batches, for 2 minutes or until browned and almost cooked through. Return beef and seasoning (from kit) to pan and cook, stirring, for 30 seconds or until fragrant.
- Fill pockets with beef, avocado, half the salad and a small dollop of salsa (from kit). Serve with remaining salad and remaining salsa.
