Family-sized Italian-style Toastie
Spoil the whole family (and save on clean-up!) with this super-sized toastie, stuffed with shaved meats, pesto, rocket and tomato. Grab a slice before they're gone!
Ingredients
- 350g ciabatta loaf, cut in half lengthways
- 1/3 cup basil pesto
- 1/2 bunch basil, leaves picked
- 100g gouda cheese slices
- 80g mild salami, thinly sliced
- 60g baby rocket
- 285g woodfired roasted peppers, drained
- 135g roasted eggplant, drained well
- 2 gourmet tomatoes, sliced
Method
- Preheat sandwich press. Spread pesto evenly over both bread halves. Top sandwich base with basil, gouda, salami, rocket, capsicum, eggplant and tomato. Add sandwich top.
- Toast for 5-8 minutes or until top is golden and cheese has melted.
- Transfer to a board and cut into 4 pieces. Serve.
