Perfect for Christmas Day
- 250g round green beans
- 1 cup long grain white rice
- 250g cherry tomatoes
- 1/4 cup lemon juice
- pinch sugar
- 1/2 cup sliced basil leaves
- 2 cloves garlic, crushed
- 5 tablespoons olive oil
Trim the beans. Blanch in boiling water for about 3 minutes or until crisp-tender. Drain and refresh in ice cold water. Drain and pat dry.
Meanwhile, cook the rice according to the packet instructions. Drain and cool. Halve the cherry tomatoes. Combine all the salad ingredients in a large bowl.
To make the dressing, place the lemon juice, sugar, basil and garlic in a blender. Mix until smooth. Slowly add the olive oil, blending until well combined. Drizzle over the salad.
Can prepare the night before and add dressing before serving.
Serves 4. Made in 30 minutes.
