Ginger Fruit Slice

A quick and easy slice to make from ingredients you always have on hand.


  • 1 cup flour
  • 1½ tsp baking powder 
  • 1 tsp ground ginger 
  • ¼ cup coconut
  • 250g fruit mix
  • 50g diced crystallised ginger 
  • 75g ginger chopped
  • 400g condensed milk


  1. Mix flour, spice and coconut together. Add dried mixed fruit and chopped ginger and coat to separate.
  2. Mix in condensed milk.
  3. Bake in a lamington tin at 180C for approximately 20 minutes.


Can be topped with lemon icing. Nuts and mixed spice can be substituted.
