Ginger Fruit Slice
- 1 cup flour
- 1½ tsp baking powder
- 1 tsp ground ginger
- ¼ cup coconut
- 250g fruit mix
- 50g diced crystallised ginger
- 75g ginger chopped
- 400g condensed milk
- Mix flour, spice and coconut together. Add dried mixed fruit and chopped ginger and coat to separate.
- Mix in condensed milk.
- Bake in a lamington tin at 180C for approximately 20 minutes.
Can be topped with lemon icing. Nuts and mixed spice can be substituted.
