Halloumi and Stone Fruit Salad
Ingredients
- 250g Halloumi
- 1 Large tin of Peach halves
- 100g Rocket leaves
- 1 Chili - finely diced
- ½ cup Mint roughly chopped
- ½ cup Basil roughly chopped
- 2 tbs Pomegranate molasses
- 1 Lemon
- 100ml Olive oil
Method
- Slice the halloumi through the middle and then place halloumi on a hot pan or bbq and leave to soften and colour on both sides
- Drain and season peaches, place alongside halloumi in pan/bbq
- Leave to char on both sides
- Place the the rocket and herbs in serving bowl, sprinkle over chili and lemon zest
- Mix pomegranate, lemon juice and oil together and pour half this mix over leaves
- Remove halloumi and peaches from grill and slice into bite size pieces, arrange over the top of the leaf mix
- Pour over remaining dressing
- Serve immediately
