Ham & Tatie Cakes
Don't let your hard work in the kitchen go to waste, make the most of those roast leftovers and whip up a batch of these Ham & Tatie Cakes.
Ingredients
- 800g leftover roast potatoes, chopped
- 150g leftover leg ham, chopped
- 3 spring onions, finely chopped
- 1 Tbsp chopped herbs thyme
- 1 Tbsp rosemary
- 3 tsp Dijon mustard
- 1 free range egg, lightly beaten
- 1/4 cup plain flour
- Oil, for shallow frying
- Rocket salad mix and lemon wedges, to serve
Method
- Roughly mash potato. Add ham, onion, herbs, mustard and egg. Season to taste and stir to combine. With damp hands, shape into 12 patties. Lightly coat with flour.
- Heat about 2cm oil in a frying pan over medium heat. Cook patties, in batches, for 3 minutes on each side or until golden. Transfer to a plate lined with paper towel.
- Serve patties with salad mix and lemon wedges.
