Healthier Apricot Cereal Balls
Hungry kids will have a ball with these super easy apricot-filled snacks, bursting with coconut and tropical vibes. Plus, they're a nutritionally approved snack that the kids will love.
Tip: Keep refrigerated in an airtight container until ready to serve.
Ingredients
- 8 breakfast wheat biscuits, broken
- 200g Woolworths dried & diced apricots
- 1 cup skim milk
- 1 1/4 cups desiccated coconut
- 2 tbs honey
Method
- Process the wheat biscuits, apricots, milk, 1 cup of coconut and honey until combined.
- Using 2 tbs at a time, roll mixture into 12 balls.
- Place remaining coconut on a plate. Roll balls in coconut to coat. Chill until required.
