Healthier Crunchy Barbecue Air-fryer Chickpeas

Ingredients
- 840g no-added-salt chickpeas, rinsed, drained
- extra virgin olive oil cooking spray
- 1 tsp smoked paprika
- 1 tsp brown sugar
- 1/2 tsp garlic powder
- 1/2 tsp mustard powder
- 1 sprig thyme, to serve
Method
- Preheat air fryer to 200°C for 3 minutes. Pat chickpeas dry. Spray air-fryer basket lightly with oil. Place chickpeas into basket. Cook for 5 minutes or until chickpeas are dry. Spray with oil and toss. Cook, shaking basket occasionally, for 10 minutes or until golden.
- Meanwhile, combine paprika, sugar, garlic powder and mustard in a small bowl. Season well.
- Add half of the seasoning mixture to chickpeas. Cook for a further 2 minutes or until golden and crunchy. Transfer to a bowl. Sprinkle with remaining seasoning and season freshly ground cracked pepper. Toss to combine. Top with thyme to serve.
Storing Tip
Once completely cool, store chickpeas in an airtight container to keep them crunchy.
