The humble iceberg lettuce gets an impressive makeover - sprinkled with crispy, spicy chorizo and drizzled with a sour cream and lime dressing, this tasty side is ready in just 10 minutes.

Ingredients

  • 1 Tbsp extra virgin olive oil
  • 250g chorizo, finely diced
  • 1 cup sour cream
  • 1 lime, juiced
  • 1 iceberg lettuce, cut into large wedges, inner leaves removed
  • 1 jalapeno, finely diced

Method

  1. Heat oil in small frying pan over medium heat. Cook chorizo for 5 minutes or until charred and crispy. Set aside.
  2. Combine sour cream and lime juice in a small bowl, then season.
  3. Arrange lettuce on a platter, spoon over chorizo and dressing, season with pepper and serve scattered with jalapeno.
