Iceberg Wedges With Crispy Chorizo
The humble iceberg lettuce gets an impressive makeover - sprinkled with crispy, spicy chorizo and drizzled with a sour cream and lime dressing, this tasty side is ready in just 10 minutes.
Ingredients
- 1 Tbsp extra virgin olive oil
- 250g chorizo, finely diced
- 1 cup sour cream
- 1 lime, juiced
- 1 iceberg lettuce, cut into large wedges, inner leaves removed
- 1 jalapeno, finely diced
Method
- Heat oil in small frying pan over medium heat. Cook chorizo for 5 minutes or until charred and crispy. Set aside.
- Combine sour cream and lime juice in a small bowl, then season.
- Arrange lettuce on a platter, spoon over chorizo and dressing, season with pepper and serve scattered with jalapeno.
