Kapiti Kikorangi Pear and Prosciutto Wrap

Pears wrapped in prosciutto are the perfect combination of salty and sweet! A simple, elegant starter.

Ingredients

  • 2-3 pears
  • 1 block blue cheese - 500g
  • 1/2 cup cream
  • Oil
  • Salt and pepper
  • 1 cup walnuts
  • 1/4 cup sugar
  • 1 tbsp butter (15g)
  • Salt

Method

Blue Cheese mix
  1. Roast the pears in the oven until golden - with oil salt and pepper for 20 mins at 180c - pears should be soft and caramalised on the outside
  2. Add the pears to the food processor and mix until smooth
  3. Then add the cheese and mix until it is crumbled
  4. Add cream Blitz- smooth - refrigerate
For the Caramelised walnuts
  1. Melt all ingredients slowly in pan
  2. Keep all ingredients moving
  3. When dark garden brown empty onto baking paper
  4. Add salt then chop roughly once cool

Handy Tips

Lay out slices of prosciutto on to a chopping board, Take the blue cheese mix and either pipe or spoon along the top edge of the meat and roll up to a cigar shape
Place on platter drizzle with honey and sprinkle with caramalised walnut pieces
