Kiwifruit cupcake
Great to bake with the kids

Easy, yummy and colourful!

Great served with whipped cream and sliced Kiwifruit. 

Ingredients

  • 125g butter
  • 1/2 cup caster sugar
  • 1 tsp finely grated lemon rind
  • 3 eggs
  • 1 1/4 cups self raising flour
  • 1/2 cup light sour cream
  • 1 Tbsp lemon juice
  • 2 Kiwifruit, peeled and diced

Method

  1. Pre-heat oven to 180oC. Line a 12 - hole muffin tray with cupcake liners.
  2. Cream the butter, sugar and lemon rind until light. Add the eggs one at a time, beating well after each addition. Beat in the flour until just combined.
  3. Mix in the sour cream and lemon juice. Fold in the Kiwifruit.
  4. Spoon into the liners. Bake for about 20 minutes or until a skewer inserted in the centre comes out clean.
