Leftover Ham Frittata
Jazz up your leftover christmas ham with this easy frittata recipe, perfect for a speedy dinner or an on-the-go snack.
Ingredients
- 60g spinach leaves
- 150g leg ham, roughly chopped
- 100g feta, crumbled
- 6 free range eggs
- 3/4 cup thickened cream
- 200g solanato tomatoes, halved
- 1/2 bunch basil, leaves picked
Method
- Preheat oven to 200°C/180°C fan-forced.
- Place spinach in a 2.2L glass container, then microwave, covered, on high for 30 seconds or until almost wilted. Stir in ham and feta.
- Whisk eggs and cream together in a bowl. Add egg mixture to ham mixture and stir to combine. Top with tomato, then bake for 35 minutes or until golden and just set.
- Serve topped with basil leaves.
