Jazz up your leftover christmas ham with this easy frittata recipe, perfect for a speedy dinner or an on-the-go snack.

Ingredients

  • 60g spinach leaves
  • 150g leg ham, roughly chopped
  • 100g feta, crumbled
  • 6 free range eggs
  • 3/4 cup thickened cream
  • 200g solanato tomatoes, halved
  • 1/2 bunch basil, leaves picked

Method

  1. Preheat oven to 200°C/180°C fan-forced.
  2. Place spinach in a 2.2L glass container, then microwave, covered, on high for 30 seconds or until almost wilted. Stir in ham and feta.
  3. Whisk eggs and cream together in a bowl. Add egg mixture to ham mixture and stir to combine. Top with tomato, then bake for 35 minutes or until golden and just set.
  4. Serve topped with basil leaves.
