Margherita Muffin Pizzas
Give the kids something to smile about with these fun-sized, nutritionally approved margherita pizzas made using wholemeal English muffins as the base
Ingredients
- 2 wholemeal muffins, split
- 2 tbs no-added-salt tomato paste
- 1 tsp dried Italian herbs
- 1/4 cup shredded mozzarella
- 4 cherry tomatoes, sliced
- 1/4 bunch basil, leaves picked
Method
- Preheat oven to 220°C/200°C fan-forced. Place muffins, cut-sides up, on a baking tray. Spread muffins with tomato paste and sprinkle with herbs and mozzarella. Top with tomatoes. Bake for 12 minutes or until cheese is golden and muffin bases are toasted. Scatter over basil, then serve.
