Matcha Truffles

As bright and colourful as they are delicious, these green tea truffles are earthy and sweet. High-quality matcha powder and white chocolate make all the difference for these sweet treats.
Ingredients
- 180g white chocolate, broken into squares
- 1/4 cup thickened cream
- 3 pkt matcha green tea powder 2g
- 1 cup white chocolate melts
Method
- Place chocolate and cream in a medium microwave-safe bowl. Microwave on medium for 1 minute. Stir and repeat in 20-second intervals until mixture is smooth. Add 2 matcha powder sachets. Using a metal spoon, stir mixture until well combined. Chill for 1 hour 30 minutes or until firm.
- Line a large baking tray with baking paper. Measure 2 level tsp chocolate mixture. Roll into a ball. Place on the prepared tray. Repeat with remaining mixture to make 16 truffles in total. Freeze for 45 minutes or until very firm.
- Place remaining matcha powder onto a small plate. Melt chocolate melts in a small bowl according to packet directions. Using 2 forks, dip half of the truffles, one at a time, in chocolate to coat, allowing excess to drain off. Return to lined tray. Sprinkle with a little of the powder. Lightly roll remaining truffles in remaining matcha powder to lightly coat. Serve.
Cooking tip:
Once dipped in the melted white chocolate melts, the truffles will set quickly at room temperature. You can make these ahead and store them in the fridge for 5 days. Storage suggestions for leftover food are a guide only. It is recommended to keep perishable food cold and in a clean container. Always label and date the container. If in doubt, throw it out.
