Mexican Grilled Chicken Burgers With Corn Salsa And Lime Aioli
Ingredients
- 1 tsp minced garlic
- 1 tomato, diced
- 1/2 cup coriander leaves
- 1/4 red onion, diced
- 1 large corn cob
- 2 chicken breasts, butterflied in half
- 1 large avocado, peeled and mashed
- 1 lime, juice
- 1/4 tsp ground chilli
- 1/4 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp dried oregano
- 1 pinch fresh ground black pepper
- 100g rocket leaves
- 1 tbs olive oil
- 1 cup Praise Deli Style Classic Aioli
- 8 small artisan bread rolls
- 1 pinch sea salt ground, to taste
Method
- Combine 2 tsp olive oil with ground coriander, chilli, cumin, oregano and garlic in a bowl.
- Add chicken and marinate for 20 minutes. On high, BBQ grill chicken then season with salt and pepper and 1/2 lime juice. Chop into pieces.
- BBQ corn until partially charred. Remove and cut kernels into a bowl, mixing in tomato, onion and coriander leaves. Season with salt, pepper and olive oil.
- Separately combine aioli with remaining lime juice.
- Layer each bread roll with avocado, rocket, chicken, corn salsa and lime aioli then serve.
