One-Pot Cheesy Chicken Noodle Soup
Get your noodle fix with this one-pot chicken noodle soup recipe. Made hearty with the addition of macaroni, cheese and roast chicken, it's the best comfort soup.
Ingredients
- 2 Tbsp extra virgin olive oil
- 3 cloves garlic, crushed
- 1 Tbsp smoked paprika
- 350g Woolworths bolognese base mix
- 1L salt-reduced chicken stock
- 300ml tub thickened cream
- 250g macaroni
- 1 cup pizza cheese, shredded
- 1 Woolworths BBQ roast chicken, skin and bones removed, meat shredded
- Finely grated parmesan, to serve
- Continental parsley leaves, to serve
Method
- Heat oil in a large, deep frying pan over medium heat. Add garlic, paprika and bolognese mix, then cook, stirring, for 3 minutes or until softened.
- Add stock and cream. Bring to the boil over high heat. Add pasta and simmer, uncovered and stirring occasionally, for 10 minutes or until pasta is tender. Add pizza cheese and chicken, then cook, stirring occasionally, for 2 minutes or until chicken is warmed through and cheese has melted. Season.
- Ladle soup among bowls. Season with pepper. Serve topped with parmesan and parsley.
