Pasta Salad with Summer Tomatoes & Herb Dressing
A fresh and beautiful pasta salad recipe overflowing with tomatoes, avocado and cucumber, finished with a silky garlic and herb dressing. Perfect for a picnic.
Ingredients
- 300g pasta shells
- 1/3 cup extra virgin olive oil
- 1/4 cup white wine vinegar
- 1 clove garlic, crushed
- 1/4 cup basil, finely chopped
- 320g tomatoes, halved
- 2 Lebanese cucumbers, roughly chopped
- 1/2 small red onion, thinly sliced
- 60g baby spinach leaves
- 2 avocados, deseeded, chopped
Method
- Cook pasta in a large saucepan of boiling, salted water according to packet instructions. Drain, reserving 2 tbs cooking liquid. Refresh pasta under cold water.
- Meanwhile place oil, vinegar, garlic, herbs and reserved cooking liquid in a small bowl. Season, then whisk with a fork to combine.
- Place tomato, cucumber, onion, spinach and avocado in a large bowl. Add pasta and dressing, then toss to combine. Serve scattered with extra herbs.
