Peanut Patties
Simple, delicious and full of peanuts!
These wholesome peanut patties are best served in a burger or with a fresh salad.
Ingredients
- 155g unsalted roasted peanuts
- 1 ½ cups cooked brown rice
- 1 medium chopped onion
- 1 Tbsp oil
- 2 Tbsp smooth peanut butter
- 2 Tbsp of chutney
- 1 ½ tsp curry powder
- 2 Tbsp olive oil
Method
- Blend or process peanuts and rice until finely chopped.
- Add onion and 1 Tbsp of oil, peanut butter, chutney and curry powder and process till combined. Refrigerate the mixture for at least 30 minutes.
- Using lightly floured hands, shape the mixture into 8 patties. Heat remaining oil in large frying pan, add patties and cook for about 5 minutes or until brown on both sides.
