Pickled Red Onions
Follow this easy recipe for the ultimate Christmas condiment. Pickled red onions go perfectly with rich meat like ham and pork, or tossed into potato salad.
Ingredients
- 3/4 cup white vinegar
- 2 tbs caster sugar
- 1 tbs sea salt flakes
- 2 tsp fennel seeds
- 1 tsp black peppercorns
- 2 small red onions, thinly sliced
Method
- Place vinegar, sugar, salt flakes, fennel seeds and peppercorns in a saucepan and bring to the boil over high heat. Allow to cool.
- Place onion in a bowl and pour over vinegar mixture. Set aside for 15 minutes to lightly pickle. Store in a sterilised glass jar or an airtight container in the fridge for up to a month.
