Potato Latkes featuring Cold Smoked Salmon Shavings

Ingredients
- 100g Aoraki Cold Smoked Salmon Shavings
Sauce ingredients
- 1/2 cup of Crème fraîche
- 1 Tbsp chopped capers
- 1 Tbsp chopped gherkins
- 1 Tbsp chopped parsley
- 1 Tbsp chopped tarragon
- 2 tsp wholegrain mustard
- Chervil sprigs (or microgreens of your choice)
Latkes ingredients
- 500g agria potatoes (or similar)
- 1/2 cup finely diced onion
- 2 eggs
- Salt and pepper
- 1/3 cup frying oil
Method
- Peel and grate the potatoes. Wash well for 2-3 minutes in cold water then squeeze dry in tea towel.
- Separate egg yolks from whites. Add yolks and onion to potato and season well with salt. Whisk egg whites to soft peaks and fold in.
- Heat oil to hot, add tablespoon dollops of potato mix and fry until golden. For best results cook in small batches, drain onto paper towel.
- Combine together all sauce ingredients.
- Spread the sauce on the latkes, add the salmon shavings, garnish with chervil sprigs and serve.
