Pulled Beef Tacos With Chargrilled Corn

Make terrific pulled beef tacos at home with this easy recipe. Pulled beef brisket meets chargrilled corn, crunchy slaw and smokey sauce in soft tortillas.
Ingredients
- 700g Woolworths COOK slow cooked beef brisket
- 4 corn cobs, husks and silks discarded
- 5ml olive oil cooking spray
- 350g Woolworths kaleslaw kit
- 8 flour tortillas
Method
- Preheat oven to 210°C/190°C fan-forced. Heat beef brisket according to packet instructions, reserving sauce sachet.
- Meanwhile, heat a chargrill pan over high heat. Spray corn with oil. Cook corn for 10 minutes, turning occasionally, or until charred and tender. Cool for 5 minutes, then using a small knife, cut corn kernels from cobs in chunks. Set aside.
- Prepare kaleslaw according to packet instructions. Heat tortillas according to packet instructions.
- Using 2 forks, roughly shred beef and toss with half of the reserved sauce sachet. Serve beef on tortillas with kaleslaw, corn and drizzled with remaining sauce.
