Pulled Pork and Avocado Salsa Pockets
Make delicious Mexican pulled pork tortilla pockets for a winning family dinner. Succulent pork and creamy avocado make a brilliant combo in this recipe.
Ingredients
- 500g pork fillet
- 1 tbs vegetable oil
- 30g Old El Paso Mexi pulled meat seasoning mix
- 1 avocado, destoned, cut into 1cm pieces
- 1 small red onion, finely chopped
- 1/4 bunch coriander, leaves picked, finely chopped
- 2 limes, juiced
- 8 Old El Paso Tortilla Pockets
- 1/4 red cabbage (finely shredded)
- mild tomato salsa (to serve )
Method
- Cut pork into 6 even pieces. Place pork in a large bowl with oil and seasoning mix, and toss to coat.
- Place 1/2 cup water in a large frying pan. Place over medium heat, then bring to a simmer. Add pork and cook, covered, for 20 minutes, turning pork halfway through cooking time or until sauce is thick and pork is cooked through. Remove from heat. Stand, covered, for 10 minutes. Using 2 forks, roughly shred pork, then stir to coat in pan juices.
- Meanwhile, combine avocado, onion, coriander and lime juice in a bowl. Season.
- Heat tortilla pockets according to packet instructions. Fill tortilla pockets with pork mixture,cabbage and avocado salsa. Serve with tomato salsa.
