Quick Beef & Kaleslaw Tortillas
Fill soft tacos with lean beef mince and kaleslaw for a quick-to-assemble midweek meal that’s ready in 15 minutes.
Ingredients
- 30g sachet Old El Paso Mexican reduced salt mild taco spice mix
- 500g lean beef mince
- 2 tsp olive oil
- 350g kaleslaw kit
- 193g Old El Paso stand ‘n stuff soft tortillas
Method
- Preheat oven to 140°C/120°C fan-forced. Remove tortillas from packaging and wrap in foil. Bake for 8 minutes or until warm.
- Meanwhile, heat oil in a frying pan over medium-high heat. Add mince and cook, breaking up lumps with a wooden spoon, for 5 minutes or until browned. Add spice mix and 3/4 cup water. Cook, stirring occasionally, for 5 minutes or until mixture thickens.
- Place kaleslaw, reserving seed mix, in a bowl. Add dressing from kit and toss to combine.
- Remove tortillas from foil. Spoon a little kaleslaw mixture into tortillas, then top with mince and seed mixture from kit. Serve with any remaining kaleslaw.
