Quinoa & Chickpea Salad

A quick and easy summer salad!
This simple quinoa and chickpea recipe is packed with nutritious ingredients. Load your lunchbox or serve at your next barbecue!
Ingredients
- 1/2 cup cooked Organic quinoa
- 425g tin Macro Organic chickpeas, drained
- 40g snow peas, sliced
- 4 cherry tomatoes, chopped
- 2 tsp Organic sunflower seeds in a container
- 2 tsp lemon juice
- 1/2 tsp olive oil
Method
- Combine 1/2 cup cooked quinoa, 125g tin chickpeas, drained, 40g snow peas, sliced, 4 cherry tomatoes, chopped and 2 tsp sunflower seeds in a container.
- Make a dressing with 2 tsp lemon juice and 1/2 tsp olive oil, and pack into a separate container.
Handy Tips
Pack the salad separate to the dressing, so it stays fresh all the way to lunch time.
