Raw Oreo Cheesecake
Ingredients
Base
- 1 1/2 cups coconut flour
- 1/2 cup cacao powder
- 2 cups almonds OR almond flour
- 2 cups dates soaked in hot water for 15 minutes
- 1/3 cup of coconut oil
- drizzle of vanilla bean paste or vanilla extract
- pinch of salt
Oreo Centre
- 1/1/2 cups cashew nuts - SOAKED for at least 3 hours prior to making
- 1/2 coconut butter
- 3/4 cup canned coconut milk
- 1/2 cup rice malt syrup
- drizzle of vanilla bean paste or vanilla extract
Chocolate Topping
- melted dark chocolate (use as much as you want!)
Method
- Create the base first, by combining all ingredients in a blender or food processor.
- Place base in the freezer for at least 15 minutes whilst preparing the middle layer (Oreo centre).
- Combine all middle layer (Oreo centre) ingredients in a blender or food processor and pour over base.
- Freeze overnight or for 4-5 hours.
- Melt dark chocolate with a tablespoon of coconut oil and drizzle over. Place back in freezer for 15 minutes to allow the chocolate to harden.
- Remove from freezer and leave for 15 minutes to soften before cutting into slices.
- Store in freezer in a airtight container. Remove slice from freezer 10 minutes prior to eating/serving so that it is not frozen.
