Roasted Honey Yams

A delicious side for a roast dinner.

Great with red or yellow yams, this honey glaze is versatile and can even be used on other vegetables.

Ingredients

  • 500g raw yams (or can use swede, parsnip, turnip)
  • 2 Tbsp oil
  • 2 Tbsp honey
  • 1 Tbsp balsamic vinegar

Method

  1. Cut the vegetables into chunks if necessary.
  2. Toss all ingredients together in a baking dish until the yams are well coated.
  3. Bake at 180°C for 30-35 minutes, or until tender and fragrant.
  4. Serve piping hot as a vegetable accompaniment to any meat dish, or allow to cool then toss through leafy greens.
