Roasted Tomatoes With Mozzarella & Basil
This Italian-inspired recipe puts a twist on the classic Caprese salad with the classic flavour combo of fresh basil, tomato and mozzarella.
Ingredients
- 6 truss tomatoes
- 200g fresh mozzarella, cut into 6 slices
- 1/2 cup basil leaves
- 1 clove garlic, crushed
- 2 tbs extra virgin olive oil
- 2 tbs Organic balsamic vinegar
- 1 tbs brown sugar
Method
- Preheat oven to 220°C/200°C fan-forced. Cut a 2cm-thick slice from tops of each tomato. Reserve tops.
- Place tomato bases in a baking dish. Arrange 1 mozzarella slice over each tomato, followed by a basil leaf. Sandwich with reserved tomato tops.
- Place garlic, oil, vinegar and sugar in a small bowl, whisking until combined. Drizzle over tomatoes and roast for 12 minutes or until mozzarella has melted and tomatoes begin to blister.
- Coarsely chop remaining basil and add to pan juices. Season and serve
