Rocket Lemon & Almond Pesto

Quick, easy and unbelievably fresh!
This home-made pesto recipe is super versatile and simple to make. Try it with steak, tossed through pasta or on top of a bagel.
Ingredients
- 3 cups Rocket Leaves
- 1 Clove garlic
- 1 tbs Lemon zest
- ½ cup Macro Almonds
- ½ cup Grated parmesan
- 150ml olive oil
- cracked black pepper
Method
- Place all ingredients in a food processor except oil, process briefly until roughly chopped.
- Start adding oil in a thin steady stream while running the processor until combined.
- Season with pepper.
