Soba Noodle Salad With Chilli & Peanut Dressing
A punchy peanut dressing has this soba noodle salad bursting with flavour.
Ingredients
- 270g pkt soba noodles
- 1/3 cup crunchy peanut butter
- 1 Tbsp sesame oil
- 2 Tbsp soy sauce
- 2 garlic cloves, minced
- 3 cm-piece ginger, finely grated
- 1/4 tsp dried chilli flakes
- 180g bag baby leaf salad with beetroot
- 1/8 wedge red cabbage, finely shredded
- 1/2 bunch choy sum, leaves separated, washed
- 2 Tbsp sesame seeds, toasted, to serve
- 1 cup cashews, toasted
Method
- Cook noodles in a large pan of boiling water for 3-4 minutes or until just tender. Drain and rinse in cold water until cool. Set aside.
- To make the dressing, whisk peanut butter, 1/4 cup warm water, oil, soy sauce, garlic, ginger and chilli flakes together in a small bowl until combined.
- Toss noodles with half the dressing in a bowl. Add salad leaves and cabbage and toss to combine. serve with choy sum leaves, sesame seeds, cashews and remaining dressing
Handy Tips
Japanese soba noodles are made from buckwheat and should be rinsed after cooking to remove starch.
