Southern-style Chicken Salad

Ready in 25 minutes, this juicy Southern-style chicken salad is the easy answer for busy weeknights.
Ingredients
- 300g Southern-style chicken breast bites
- 5ml extra virgin olive oil cooking spray
- 450g American-style slaw
- 1/2 bunch coriander, leaves picked
- 1 lemon, cut into wedges
Method
- Preheat oven to 180°C/160°C fan-forced. Line a baking tray with baking paper. Arrange chicken bites, in a single layer, on tray and spray with oil. Bake for 15-20 minutes or until golden and cooked through. Transfer to a board and slice.
- Place slaw into a large bowl. Add dressing and three-quarters of the coriander.
- Arrange slaw on a platter. Top with chicken and sprinkle with remaining coriander. Serve with lemon wedges.
