Speedy Lamb Ragu
A hearty and flavourful Italian dish where tender lamb, sweet carrots, and aromatic onion and garlic stew in a rich tomato sauce. This easy ragu is perfect for a cosy night in.
Ingredients
- 350g pappardelle
- 2 tbs extra virgin olive oil
- 1 brown onion, finely chopped
- 2 cloves garlic, crushed
- 2 carrots, finely chopped
- 500g lamb mince
- 130g Concentrated Tomato Paste
- 1/4 bunch parsley, chopped
- 100g feta, crumbled
- 1/4 cup pine nuts, toasted
Method
- Cook pasta following packet instructions. Drain.
- Meanwhile, heat oil in a large frying pan over high heat. Add onion, garlic and carrot. Cook for 5 minutes. Add lamb. Cook for 3 minutes or until browned. Add paste and ½ cup water.
- Cook for 3 minutes. Toss pasta though lamb mixture. Serve sprinkled with parsley, feta and pine nuts.
