Steak Sub With Sweet Potato Chips
Ingredients
- 1 brown onion, thinly sliced
- 2 tomatoes, thinly sliced
- 1 beetroot, peeled, grated
- 125g soft cheddar, crumbled
- 60g baby spinach leaves
- 400g Turkish bread, split, toasted
- 1/4 cup aioli
- 135g sweet potato chips (optional)
- 2 tbs olive oil
- 400g beef sizzle steaks
Method
- Heat 1 tbs oil in a large frying pan over medium heat. Cook onion for 8 minutes or until soft and golden brown. Remove from pan.
- Reheat frying pan over high heat. Coat steaks with remaining oil and season. Cook, in batches, for 1 minute on each side or until golden brown.
- Place bottom half of toast on a large chopping board. Spread with aioli, top with spinach, tomato, beetroot, steaks, onion and cheese.
- Add a few chips, if using, sandwich with toast lid and cut into 6 sandwiches to serve.
